Stuffed peppers with spaghetti sauce

  1. Preheat oven to 205 degrees Celsius (400 degrees Fahrenheit).

  2. Heat oil in a skillet over medium heat. Cook mushrooms, onion and carrot for 2 to 3 minutes.

  3. Add spaghetti sauce and continue cooking for 5 minutes.

  4. Remove from heat and add rice, Parmesan and herbs. Stir to combine.

  5. Cut peppers in half lengthwise, then remove seeds and white membrane. Place bell pepper halves on a parchment-lined baking sheet and top with spaghetti sauce mixture. Cover with cheese.

  6. Bake for 20 to 25 minutes.
